#1418 - Permanent Private Chef required - Live out - Monday to Friday - Sussex (near Lewes/Brighton/Haywards Heath)

A private permanent chef is required for family of 5 based in Sussex. This is a live out role and is only suited to a chef based in Sussex, or within commutable driving distance to Lewes/Brighton/Haywards Heath area. Nearest main town is Burgess Hill. The family consists of mum, dad and three children (teenagers - 2 girls, 1 boy). The chef must be a driver with a car.

The family are passionate about food and what they eat - it’s a really important part of their family life and their health. They love fine dining, lots of different international cuisines and Japanese food in particular. They are good cooks themselves but are so busy they do not have the time, so are looking for someone to come in and take over the burden.

This role requires an experienced chef who can introduce lots of variety and the wow factor. The cook needs to be passionate about where they source their food, they must make everything from scratch, from kimchi, to kombucha to sourdough and who can utislise all the veg and herbs from the garden. Someone with a passion for kitchen gardens, health and where food is sourced, is preferred.

The role includes all the menu planning, shopping for ingredients, managing larder and fridge (stock levels), keeping the kitchen cleaned down, organised and tidy.

The house is a tranquil and beautiful rural setting on an old farmhouse with an extensive (but could be improved) veg and herb garden and free-range organic chickens. It’s a very tranquil and calm house and would suit someone who’s happy pottering about on their own and enjoys peace and quiet. There’s a separate kitchen for the chef to work from (with a recent extension they have a new kitchen and an ‘old’ kitchen which is fully kitted out) kitted with aga and gas hob, plus all the usual kitchen gadgets.

Term time during the week it’s just the Mum and Dad at home during the day. Plus three teenagers in the evenings. During holidays, the teenagers are also at home for lunch.

They like to eat really healthily, using organic produce and home-grown when possible, and have quite a few dietary needs which are subject to change regularly, so it is essential the cook is experienced, sensitive and flexible around these and happy to cater to differing requirements. Dietaries include dairy free (for some family members, not all), no nut/sesame for one child, one member of family does not like spicy food, but others do and various other needs such as the main female principal being on a low FODMAP diet. Meals required: daily lunch (sometimes prepped the day before to take to work). Children require packed lunches for school/work. Dinner is their main meal and served around 6.30/7pm. Healthy snacks for fridge/pre dinner drinks etc also appreciate. Lunches and dinners also to be prepped and left for the weekend. Healthy snacks, weekend puddings and a few nice dips or treats for pre-dinner drinks also required.

Occasional dinner parties at weekends, and the odd bigger event - with notice given.

This is a Monday to Friday role from approx 11am - 7/7.30pm, with occasional dinner parties on a Saturday and the odd bigger event (with notice given).

The family require someone knowledgeable, experienced, flexible and willing. Salary depends on experience and expectations, but an appropriate salary is offered for the right person.
